The Zucchini-Spaghetti Casserole Dilemma

As an international college student, my worst school food experience in the cafeteria was indescribably vivid. On a particularly gloomy day, I entered the canteen during lunch break, only to be confronted with a mysterious casserole-like dish that looked suspiciously similar to zucchini noodles. I turned to the server, curious and a bit concerned: “What is this?” she replied, perplexed and equally clueless: “I had no idea.”

Deciding to play it safe, I eventually settled on a bowl of cereal. If the lunch lady couldn't explain what was in it, then I certainly wasn’t eating it! My experience is a testament to the importance of knowing what you're putting in your body, especially in a dining hall setting.

The Greasy Elementary School Pizza

Serial stories of memorable school food experiences often start in our formative years. One of my earliest and most vivid recollection is of the pizza served weekly during my K-8 elementary school in the 1970s. Every Friday, the cafeteria served an indescribable and inedible greasy concoction that left a lingering stench in the air reminiscent of feet and overripe cheese.

Years of avoiding pizza would follow because I presumed the taste mirrored the cafeteria's menu. It took me until the age of 15, at a boarding school, to discover fresh and thoroughly delightful pepperoni and mushroom pizza. This experience taught me the value of diverse food experiences and how to sample different cuisines without judgment.

A Day Disrupted by Unfairness

While my college years were not all that bad, one incident struck deep into my memory. The cafeteria offered a weekly steak and shrimp night, which typically meant filling out a ticket for the meal. However, on one particular day, a friend and I found ourselves victimized by an unfair system.

We received our tickets and approached the server, who took our card. Just as we were called, another server hurried over with a tray of food. As the original server moved on to the next person, she demanded another ticket. My friend vocalized the issue, and the server eventually relented. However, when it was my turn, the server looked at me as if I were lying and only gave in after a heated protest about the same ticket. This unfortunate episode underlines the importance of communication and fair service practices in dining.

The incidence of an undercooked pizza night stood out as well. On a spring evening, it seemed like pizza night at the other dining hall was going to be a delightful experience. But when I picked up my slice, I found the dough uncooked—Yuck! I scraped the toppings off, ate them, and hoped the situation was a one-time mistake. Thankfully, subsequent slices returned to a more palatable state.

These stories remind us of the often-forgotten lessons about resilience and adaptability, as well as the need for clear communication and fair practices in school settings, especially around food.
